Mahi Mahi with Brown Butter and Mushrooms

I love watching Jacques Pepin on PBS. First off, he’s on PBS and second, his cooking style isn’t complicated by a million ingredients and methods that I (and most viewers) have no clue about because I didn’t go to culinary school. He presents French cuisine in a very simple and easy way and uses ingredients that are not always fresh out of your very own garden *gasp*. He made a grand marnier with brown butter and I adopted his recipe with mahi mahi. Just simply brown the butter in a non stick pan, saute the mushrooms, cook the fish, and garnish with parsley. So easy and delicious!
