White Bean and Kale Stew

After some time of refusing to go to the grocery store and eating out of the pantry (I blame it on the cold weather + no car) I bit the bullet today and went out of my way to go to Trader Joes. This is the result of today’s grocery trip. White bean and kale stew that tastes as good as it looks. I added carrots, celery, and onion with EVOO and cooked until soft. Then added a cup of dry white wine (pinot grigio in my case) and simmered until half was evaporated. Then I added 4 whole tomatoes (from can), kale, chicken stock, 2 cans of rinsed white kidney beans, fresh thyme, parsley, and a bay leaf, and a dash of cinnamon for fun. I let it boil at medium high heat and turned it down to let it simmer for about 20-30 minutes. For the serving, I added a heaping tablespoon of grated parmesan cheese. Enjoy!white bean kale stew
